There is an issue with the new feature of (Convert a table into a page), as I can’t revert the page into a table again.
yes, this is why I never used it again after I noticed this behavior.
It’s a great feature, but this behavior makes it unusable.

Thanks for flagging this, and I’m glad to hear the convert-to-table page function has been useful (at least for that directional use case).
You’re right that there isn’t currently a way to convert a table page back into a regular table after making that change. Our team is aware that this is a pain point, and we’re looking into ways to improve this experience.
I don’t have a timeline yet, but I’ve shared your feedback with the team as another example of where this would be helpful, and will follow up with any updates.
