Is there a way to hide that “Gallery” button at top/left of published doc? — I upgraded to Pro plan because I was hoping that all element related to Coda will disappear.

That’s because you’re in edit mode. If you go to the published link, you’ll see it as a visitor, and you’ll have a different (adjustable) navigation format.
